2 cups rotini pasta
1 pint G.R.EAT Grab Rinse Eat!® orange grape tomatoes, chopped
1 package LivingCube™ Basil microgreens
1 tbsp extra virgin olive oil
1 tbsp lemon juice
3 garlic cloves, minced
½ tsp salt
¼ tsp pepper
3 cups fresh baby spinach
1 cup shredded mozzarella cheese


  1. Cook rotini pasta according to the directions on the package. Drain and rinse pasta with cold water.
  2. While the pasta is cooking, chop up the tomatoes.
  3. In a small bowl, mix together the extra virgin olive oil, lemon juice, garlic, salt and pepper to create a vinaigrette.
  4. Toss together the vinaigrette with the rest of the salad ingredients in a bowl.
  5. Serve and enjoy!
