2 cups rotini pasta
1 pint G.R.EAT Grab Rinse Eat!® orange grape tomatoes, chopped
1 package LivingCube™ Basil microgreens
1 tbsp extra virgin olive oil
1 tbsp lemon juice
3 garlic cloves, minced
½ tsp salt
¼ tsp pepper
3 cups fresh baby spinach
1 cup shredded mozzarella cheese
- Cook rotini pasta according to the directions on the package. Drain and rinse pasta with cold water.
- While the pasta is cooking, chop up the tomatoes.
- In a small bowl, mix together the extra virgin olive oil, lemon juice, garlic, salt and pepper to create a vinaigrette.
- Toss together the vinaigrette with the rest of the salad ingredients in a bowl.
- Serve and enjoy!
This recipe can be served immediately or stored in the refrigerator up to 3 days.
