2 cups cooked quinoa
1 pint G.R.E.A.T Grab Rinse Eat!® orange grape tomatoes
1 package LivingCube™ Basil microgreens
1 cup mini fresh mozzarella cheese balls
4 tbsp rice wine vinegar
3 tbsp olive oil
¾ tsp salt, or to taste
½ tsp black pepper, or to taste


  1. Cook quinoa according to package directions and place cooked quinoa in a large bowl.
  2. Add all remaining ingredients and toss very well to combine.
  3. Salad can be served immediately or transferred to an airtight container, refrigerate, and allow flavors to marry before serving, for up to 3 days.

Cooking Tips

Adding a pinch sugar brings out the flavor of the tomatoes and balances the vinegar.
