Tomato, Mozzarella, and Basil Quinoa Salad

2 cups cooked quinoa
1 pint G.R.E.A.T Grab Rinse Eat!® orange grape tomatoes
1 package LivingCube™ Basil microgreens
1 cup mini fresh mozzarella cheese balls
4 tbsp rice wine vinegar
3 tbsp olive oil
¾ tsp salt, or to taste
½ tsp black pepper, or to taste
- Cook quinoa according to package directions and place cooked quinoa in a large bowl.
- Add all remaining ingredients and toss very well to combine.
- Salad can be served immediately or transferred to an airtight container, refrigerate, and allow flavors to marry before serving, for up to 3 days.
Adding a pinch sugar brings out the flavor of the tomatoes and balances the vinegar.
