Heirloom Tomato and Maple Pancetta Stacks

2 DelFrescoPure® Heirloom Tomatoes slice 1/3 inch
6 slices pancetta
1 tbsp maple syrup
¼ cup goat cheese
¼ cup basil chiffonade
Salt and pepper
- Place pancetta on a hot grill, brush with maple syrup and cook until pancetta starts to crisp. Remove from heat and set aside.
- Place tomatoes in bowl and dress with olive oil, salt, and pepper.
- Lay tomato on a plate, top with crumbled goat cheese then one slice pancetta and basil. Repeat the steps and finish with balsamic reduction.
