1 cup diced YES!Berries Your Everyday Snack® strawberries 1 cup butter, softened 1 cup packaged brown sugar ¾ cup granulated sugar 2 large eggs 1 tbsp vanilla ¾ tsp baking soda ½ tsp salt 3 cups flour 1 cup white chocolate chips
In a bowl of a stand mixer, cream together butter and sugars
Add in the eggs and vanilla, mixing until just evenly incorporated
In a separate bowl, whisk together the salt, baking soda, and flour. With the mixture beating on low speed, slowly add the flour mix into the bowl. Continue just until all of the dry ingredients are evenly incorporated
Use a spatula to fold in the chocolate chips and the diced strawberries
Line a baking sheet with a baking mat, or sheet of parchment paper, and drop the dough out on the tray evenly dispersed, rounded tablespoons
Bake the cookies at 350 degrees for 10-12 minutes, or until the cookies have begun to brown
Remove the cookies from the oven and let them rest for 5 minutes
After adding in the chocolate chips and strawberries, be sure to remember to be gentle with it or the strawberries will become gushy.
If you are interested in turning these cookies into festive shapes add 1/2 cup of extra flour to the dough and 1/4 cup of sugar to the dough and mix well. Then coat the strawberries in flour before adding them to you cookie dough.
