Creamy Dill Euro Beans

1 package Euro Beans, trimmed and cut into 1 -1.5” sections

1 large yellow onions, diced

3 cloves garlic, crushed

Salt and pepper to taste

¾ cup sour cream

2 tablespoons fresh chopped dill


  1. Blanch the beans in boiling water for 2 minutes and then quickly immerse them in ice water to stop the cooking and set the bright green colour. Drain well.
  2. Heat a skillet over medium heat. Add onions sauté until translucent then add garlic and continue to sauté for a couple of minutes making sure the garlic does not burn.
  3. Add the drained Euro beans and sauté until warmed through, about 5 minutes. Season with salt and pepper to taste.
  4. Reduce the heat and gently add in the sour cream and fresh dill. Heat and stir well.
  5. Serve immediately.
