12 oz Euro Beans®, washed and cut into 2-3” lengths on an angle 2 tablespoons white wine vinegar 3 tablespoons extra virgin olive oil
Salt and black pepper to taste 2 tablespoons chopped mint leaves (plus extra) and a sprig for garnish
Blanch beans in boiling water for 2 minutes and then quickly put into ice water to stop the cooking and set the bright green color
Drain well and then toss with vinegar, oil, salt, pepper and mint
Place on serving plate or bowl and garnish with remaining mint
By itself, this salad is deliciously fresh; however, you may want to consider adding more food items for a salad platter for a company dinner. Including the beans, place one whole Burrata or fresh Mozzarella cheese drizzled with olive oil, salt, pepper and chili flakes. Toss together ¼ cup pitted and sliced Kalamata olives with 1 tablespoon drained capers and place beside cheese. Serve with crusty bread.
