12 oz Euro Beans®, washed and cut into 2-3” lengths on an angle
2 tablespoons white wine vinegar
3 tablespoons extra virgin olive oil
Salt and black pepper to taste
2 tablespoons chopped mint leaves (plus extra) and a sprig for garnish
By itself, this salad is deliciously fresh; however, you may want to consider adding more food items for a salad platter for a company dinner. Including the beans, place one whole Burrata or fresh Mozzarella cheese drizzled with olive oil, salt, pepper and chili flakes. Toss together ¼ cup pitted and sliced Kalamata olives with 1 tablespoon drained capers and place beside cheese. Serve with crusty bread.
