2 Gourmet Baby Eggplants
1/2 cup tomato, pizza or Marinara Sauce
1/2 cup Italian shredded cheese blend
1/2 cup lightly wilted spinach or diced roasted red pepper
1 Romatalia® Roma tomato, thinly sliced and each slice cut in half


  1. Preheat the oven to 425°
  2. Prepare eggplant by trimming ends and removing skin. Cut into long strips (1/4” wide)
  3. Place eggplant slices on baking tray. Sprinkle with salt. Bake for 15 minutes or until just cooked through
  4. Remove from oven. Spread 1 tablespoon of sauce over each eggplant slice, then add 1 tablespoon of cheese. Top each slice with 1 tablespoon of wilted spinach or diced roasted pepper and finish with 1½ slices tomato
  5. Bake at 425° for 10 minutes. To brown cheese at end, turn on the broiler for a few minutes
