2 Gourmet Baby Eggplants 1/2 cup tomato, pizza or Marinara Sauce 1/2 cup Italian shredded cheese blend 1/2 cup lightly wilted spinach or diced roasted red pepper 1 Romatalia® Roma tomato, thinly sliced and each slice cut in half
Preheat the oven to 425°
Prepare eggplant by trimming ends and removing skin. Cut into long strips (1/4” wide)
Place eggplant slices on baking tray. Sprinkle with salt. Bake for 15 minutes or until just cooked through
Remove from oven. Spread 1 tablespoon of sauce over each eggplant slice, then add 1 tablespoon of cheese. Top each slice with 1 tablespoon of wilted spinach or diced roasted pepper and finish with 1½ slices tomato
Bake at 425° for 10 minutes. To brown cheese at end, turn on the broiler for a few minutes
Many other variations are possible! Substitute sautéed mushrooms, crumbled cooked Italian Sausage, crumbled cooked bacon, diced ham, prosciutto, or other favorite ingredients instead of the spinach or roasted pepper.
